NewZNew (Chandigarh) : Dera, the Indian room at Taj Chandigarh, completes a decade in the city and on this occasion they re-launch the restaurant with an all new delectable menu that promises to revive age old authentic dishes from the pre-partition Punjab area.
Mr. Surinder Singh, the General Manager, who himself favors Indian cuisine, feels that Dera ‘already offered some very unique dishes from the Pakistan and Punjab belt, however, the new menu now takes the game to an entirely new level.’ He talks about how the art of stone cooking has been revived with dishes like Pathhar gosht and how Atta Chicken brings back the concept of baking without using an electrical oven. Some very interesting dishes like Dabi Arbi kay kebaband Mirchi Aloo do excite the vegetarian platter by bringing to the table much more than the usual run of the mill dishes. The Sitaphal Kulfi is indeed very interesting and a dessert which is rarely found in any other India restaurant in this region.
Chef Sumant’s expertise in menu creation is obvious by the new Dera menu layout, which offers not just very good North Indian cuisine, but also brings back the concept of combining certain foods with certain side dishes for optimal results. The bread section offers a large variety like and the raitas and pickles that the restaurant brings to the table are indeed unique.
Ambience wise also the restaurant has been completely revamped with new upholstery and new uniforms. With live Sufi fusion music and authentic Indian serving style, Dera is looking to create a dining experience, which goes beyond the ordinary.
