The festival which will be on till Dec 20 has brought for ‘Amritisari food’ enthusiasts, sumptuous offerings of original Amritsari recipes by Chef Chaman Lal, who has come from Amritsar to provide that taste which only Amritsari food can boast of.
Says Mr. Ritesh Puri, Owner, Amritsar Express, “We are trying to make people of the tri-city aware of the great Amritsari food culture. The objective of ‘Ambarsari Tadka’ is to present authentic Amritsari Fare – for the First time in Tri-city to celebrate the Holy city’s rich food heritage.” The team at Amritsar Express headed by Chef Chaman Lal, who has a 25-year experience in cooking & preparing mouth watering Amritsar recipes, has put together umpteen options for both vegetarians and non vegetarians in the festival menu.
The Amritsari Special section is quite inviting. There are exotic & truly Amritsari dishes in this. For the first time in Chandigarh people will be able to bite into the famous Luchian – a form of bread served with Channa, it is noteworthy that ‘Luchian’ in the good old times was exchanged between would be bride and groom families in Punjab. What’s more, ‘Gilla Kulcha’ can be savoured with Channa & Chutney and this has been brought straight from Amritsar. Then that delectable ‘Amritsari Naan with Channa & Chutney’ will have you coming back for more.
Says Mr. Chaman Lal, Head Chef, Amritsar Express, “The uniqueness of Amritsari food is the use of masalas which are ground specially by us in Amritsar. There are no artificial colours used and the food is healthy. Items like ‘Gilla Kulcha’ which has an amalgamation of channa, chutney, mint sauce, onion, tomato, achar all filled into it is transported fresh from Amritsar on a daily basis. The fish too is brought in daily from Amritsar.”
Starters in Vegetarian have Soya Champ Tikka & Soya Champ Butter Masala to name a few. The starters one can try in Non Vegetarian are Boti Kabab, the good old Tandoori Kukkad and popular river fish preparations — Fish Amritsari & Tikka served with tarter Sauce. The main course in vegetarian boasts of a lip smacking dish Pithi Puri served with Channa, Dal Amritsari is lovable, Cheese Naan with gravy and Channa Amritsari Special all are worth a try. The festival is a delight for non vegetarians who can order dishes like Keema Kaleji, Keema Naan, the special Amritsari Kukkad with gravy is delicious and simply tastes like home-made chicken, Punjab style Rogan Josh and Amritsari Kukkad in butter take the prize.
