What is Balti ? The word is found in Urdu, Hindi and Bengali, and means “bucket. The word developed from the Portuguese ‘balde’, meaning bucket or pail, and traveled to South Asia via the Portuguese seafaring enterprises of the early sixteenth century. One can deduce that the word made its way into the English language during the British raj.
In essence, it is a style of curry that is cooked quickly on top of a stove, in a pan using a stir-fry technique. Originating in northern states, in a mountainous and isolated regions. Balti is a century’s old cuisine combining Tibetian and Kashmiri influences in spices and uses a traditional flat cast-iron frying pan that has various applications, including cooking breads and roasting spices. Balti cuisine produces aromatic, fresh, spicy and very tasty dishes in a very short span of time. As the method of cooking is quick, the best possible ingredients are required; crispy vegetables, lean and tender meat and poultry, fish and shell fish. Balti does not have much strict rules hence various combinations can be tried. The cuisine definitely depends on the blend and the flavors of the spices used.
